Root & Berry Smoothie

Fall in love with this seasonal fall smoothie not only for it’s bright red color but it’s tasty combination of hearty root vegetables and sweet berries! Nutrition packed with bonus tips for optimal digestion.


Ingredients:

  • 4 dino kale leaves, stemmed & washed or 2 cups spinach tightly packed

  • 1/2 beet, scrubbed, peeled and ends trimmed

  • 1 cup frozen strawberries or raspberries

  • 1/2 cup frozen cherries

  • 2 carrots, scrubbed and ends removed

  • 1 frozen banana

  • 1 thin slice fresh ginger- thicker if you like it spicy

  • 1 thin slice fresh turmeric root

  • 1/4 of a fresh lemon with skin

  • ¼ cup of flax meal or 2 TBSP chia seeds soaked in 1/2 cup of water

Directions:

  1. Add all ingredients to blender. Fill with filtered water to the halfway mark and blend. Add any amount of additional water to adjust thickness.

Notes: If fruit is not frozen, add one cup of ice cubes to blender.

Enjoy immediately with a handful of nuts to incorporate some chewing for better digestion.

The addition of beets, keeps this smoothie more red. Without the beets, the color will be taupe from the combination of red berries and green leaves. I personally love bright colors, and like to keep singular colors - e.g. bluish-purple of a berry smoothie, red of a beet /strawberry smoothie, orange of a carrot/orange smoothie and bright green of any greens married with bananas or pineapple for a lighter green.
