Did you know quinoa is actually a seed not a grain? That makes this breakfast bowl an easy to digest way to start your day. Add this to your weekly meal prep by precooking the quinoa to have on hand for a quick and easy meal. Keep your gut happy by switching things up with your favorite fresh seasonal fruits, such as apples in the fall or strawberries in the spring.


Ingredients:

  • 1 cup quinoa

  • 1.25 cups water

  • 1 cup non-dairy milk

Optional Toppings:

  • Dried fruit

  • Nuts

  • Nut Butters

  • Seeds

  • Apple-Cinnamon Mix

Directions:

  1. Precook your quinoa by bringing water and well rinsed quinoa to a boil, lowering to a simmer until water has been absorbed. Cool and keep in refrigerator for the week.

  2. When ready to eat, mix 1/2 cup non-dairy milk with 1/2 cup precooked quinoa, bring to a boil and then lower the heat to simmer for 2 minutes.

  3. Top with any combination of nuts, seeds, spices or seasonal fruits to make this a filling warm breakfast.
